La Tana dell’Istrice

Sergio Mottura is the premier winemaker in Lazio and the man responsible for turning the humble Grechetto grape into an internationally regarded wine. At La Tana dell’Istrice, the Mottura family hotel in Civitella d’Agliano, ViaMedina creates seasonal menus with wine pairings selected from the cellars.

Using vegetables from the family garden at Poggio della Costa, eggs and chicken from up the road, or wild plants we forage in the surrounding forest, every menu reflects the traditions of the area as well as the innovation and ingenuity that made Sergio Mottura one of the foremost winemakers in Italy.

Cooking Classes

Why have a Michelin trained chef around if he can't teach you some pointers, right? Mark is an amazing teacher, and he's done cooking classes with groups from all over the world. He’s also a pasta specialist, particularly with budding artists like these!

Cooking classes at La Tana are not just about the kitchen, either. You’ll have a tour of the cellars and a glass of bubbly to start, and then throughout the course you’ll learn how to pair food and wine on your own. Finally, you’ll sit down to enjoy the fruits of your labour (and the vine) with a three course meal, complete with wine pairings from Sergio Mottura.

We also organize cooking classes in private homes and properties all over Italy (and the world), and we love helping people learn about just how much they can do. All you need is an apron and a dream.

Conferences
and Retreats

Central Italy is one of the cradles of civilization, and in every town you'll find centuries old artefacts and monuments. There is truly no better backdrop for an academic gathering, workshop, or conference.  We've hosted researchers from around the world in historic buildings where they exchange their ideas in the same halls that great philosophers did before them.

If your institute or university is planning a meeting, we can find you all of the resources you need to make it a success. We arrange travel, accommodation, transport and meals- basically, all of the practical stuff, so you can stay focused on the bigger picture.
